From backyard barbecue cooks to the world’s most acclaimed restaurants, everyone has a signature take on the burger, including Vidanta Nuevo Vallarta’s best chefs. So we thought we’d ask them to show theirs off.
Of the sixteen burgers highlighted throughout the Top Burger competition, we’re rounding up the most mouthwatering offerings to share with you. But be warned—intense hunger pains might strike as you read through!
1. Chef Laura Reynaga, El Pastor Burger
Chef Laura leads the kitchen at Balché restaurant, but she got her start at Vidanta Nuevo Vallarta’s Tacos Break in 2006. In many ways, this creation is a nod to those roots—the burger features a mix of pork and beef marinated in citrus and guajillo chilies, just like the al pastor tacos Tacos Break is known for. Topped with pineapple, cilantro dressing, and served on a brioche bun, this dish features an exciting mix of sweet, spicy, and succulent flavors.
2. Chef Felipe Hernández, Fish N Chips Burger
As a master in Mukimono, the art of decorative garnishing, it’s no surprise this chef of The Burger Custom Made created an unusual submission to the competition with major design flair. The burger stars a lightly battered fish fillet patty dressed with a chipotle mayonnaise, a beet reduction, purple coleslaw, and finished with avocado pearls, all on a poppy seed flat bun. This is one work of art that is as delicious as it is impressive.
3. Chef Maribel Aguirre, Fresh Co Burger
Coming from the Fresh Co kitchen as their head chef, Chef Maribel created a fresh yet classic burger for the competition. The restaurant famously features bright, vibrant American fare, so her approach of giving a high-end slant to a traditional version of the dish is perfectly characteristic. She layered two all-beef patties, bleu cheese mixed with cheddar, a light remoulade, lettuce, tomato, and onions atop a brioche bun, making for a towering burger.
4. Chef Iván Díaz, Veggie Lover Crunch
As an accomplished chef who’s worked all over the world, the Executive Chef at Vidanta Nuevo Vallarta has experience with a wide variety of ingredients, cuisines, and techniques. He also created one of the most unconventional burgers offered during the competition. His version flaunts bold yet perfectly harmonized flavors with a veggie patty that mixes quinoa, lentils, beans, beets, squash, and carrots to create a burger as substantial and filling as its meatier competition. Topped with yogurt sauce, mango chutney, and hummus, it has a distinctly worldly appeal.
5. Chef Raúl Alberto, The Lord of Lamb Burger
With a name like that, you know you’re digging into an unapologetically audacious burger. The chef at Rummba has a long history with Vidanta, working in the kitchens of all of its top restaurants. Now, he’s ready to make a lasting impression with a Mediterranean-inflected dish that features a lamb and beef patty, plenty of grilled vegetables, hummus, and Tzatziki sauce.
