With its amazing location and unparalleled views—which have only gotten more breathtaking in recent months—Bistro Bleu, formerly Azur, is already an ideal choice for dinner during any Vidanta Nuevo Vallarta visit. But with the restaurant’s new name has come a mouth-watering new menu, filled with traditional yet luxurious French dishes. And if you’re craving Azur’s classic Tartare de Boeuf or Escargots, worry not—a few of the favorites from the original menu are still around for you to enjoy.
To get more information about Bistro Bleu at Nuevo Vallarta, we talked to the restaurant’s Executive Chef, Christophe Letemple. With this new iteration of a French eatery, it was important to him to retain the classic flavor profiles traditionally associated with French cuisine while also keeping a simple, comfort-food feeling. That means honoring the “bistro” concept, which is known for offering delicious favorites that are more approachable than the “haute cuisine” that is often associated with modern French restaurants.
We asked for a sneak peek of the menu, and Chef Letemple obliged, explaining that he’s added Terrine de Foie Gras Maison—which is actually house-made and prepared onsite for an extra authentic touch. There’s also Côtes D’Agneau Rôties avec Couscous et Légumes au Cumin for an herbaceous take on roast lamb served with delicately flavored vegetables and couscous. And the Cuisse de Canard Confite avec Pommes Sautées offers succulent duck thigh, prepared in the traditional manner and served with perfectly cooked potatoes.
The menu isn’t the only thing that dazzles at Bistro Bleu. Once guests arrive at its location on the third floor of La Plaza, they will be greeted by the expert maître D, Xavier Colin, who has more than 43 years of fine-dining experience. The dining room is as beautiful as ever, but for the best complement to the delightful new cuisine at Bistro Bleu, we recommend guests dine on the terrace. Not only does the open-air setting showcase the surrounding views, but it also offers an excellent look at the newly transformed lakefront and beachfront at Nuevo Vallarta, including miles of gorgeous new wooden pathways and lush landscapes.
