At Vidanta, indulging during vacation includes having an array of healthful, nourishing foods to satisfy your palate.

Fresh produce is at the core of Mexican gastronomic culture, and at Vidanta, we prioritize cooking and baking with the healthiest and freshest ingredients to give our guests an authentic taste of our traditions.

Pre-Hispanic food was mainly based on local plant foods and grains, with corn, beans, squash, chili peppers, and different varieties of quelites (edible wild greens) being the staple foods of Mesoamerican cultures. Nowadays, Mexico is among the top three countries to produce avocado, tomatoes, berries, walnuts, lemons, mangos, chili peppers, lettuce, asparagus, and onions*. The country's fertile soil and bountiful seas give us an amazing opportunity to showcase our chefs' culinary talents in each Vidanta destination.

OUR MISSION
Vidanta is committed to using products with the least traceability and always values providing support to our producers.

Thanks to the significant volume we require at each destination, we collaborate closely with local suppliers and nearby fields and farms to find the best raw materials for our restaurants. As a standard, we acquire fresh fish and seafood and bring catch-of-the-day options to your plate. To achieve this, we work directly with local fishermen's cooperatives in each destination, and our vendors meet the highest quality criteria.

The menus in all our resorts seek the maximum flexibility to offer current gastronomic trends, so our chefs always look for originality, optimize seasonal products, and showcase them in our culinary festivals.

In our constant effort to satisfy every palate and dietary need, we are proud to say that now all major celebrations like Thanksgiving, Christmas, or New Year's have the option of a mouthwatering vegetarian menu in all destinations, as well as other gastronomic immersive experiences such as Le Petit Chef and Cirque du Soleil JOYÀ.

Ancho Chili With Vegan Meat at Tres Aromas
Prepared with olives, tomatoes, plantain, and topped with mole from Tabasco.

Vegan Parmentier at Bistro Bleu
With mashed potatoes, arugula salad, and a mushroom demi-glace sauce.

Sweet and Sour Vegan Burger at The Burger Custom Made
Served on a ciabatta bread with arugula salad, tofu, avocado, and spicy BBQ sauce.

NotMeat Montadito at Chiringuito
Grilled-seared NotMeat tapa with herbs, Brie cheese au gratin, and caramelized onions.


LA HUERTA

Located between Grand Luxxe Residence and Tower 5 at Vidanta Nuevo Vallarta, La Huerta (the orchard) is a stretch of fertile land where our efforts of locally sourcing and caring for the environment are put to work.

Our head gardener and kitchen team decide what is most viable to use on current menus, so you always get ingredients from the orchard to your table.

Energy Smoothie
Ingredients:

• Fresh orange juice 300 ml / 10 fl oz
• Frozen strawberries 125 g / 4.5 oz
• Sliced almonds 1 tbsp
• Ice 100 g / 3 oz

Instructions:

• Blend all ingredients, serve in a 20 oz glass, and enjoy!
